Determination of 2-Monochloropropane-1,3-Diol Esters (2-MCPDE), 3-Monochloropropane-1,2-Diol Esters (3-MCPDE) and Glycidyl Esters (GE) in Marine Oil-Based Supplement by Acid Transesterification Via Gas Chromatography Coupled to Mass Spectrometry (GC-MS)

Fish and algae oil can be commercialized as food supplement capsules and consumed daily due to their health-beneficial compounds as fatty acids and vitamins. Nevertheless, levels of 2-MCPDE, 3-MCPDE, and glycidyl esters (GE) have been reported in food products including fish. Once the oils are refined, these toxic components can be formed during this process, making it imperative to monitor the levels of MCPDE and GE. Hence, both indirect and direct methods are being studied for the determination of these esters in vegetable and marine oils. The present study aims to describe an indirect method for 2-MCPD, 3-MCPD, and GE determination in marine oil-based supplements by acid transesterification using GC-MS.
