Postbiotic Food Packaging Using Bacteriocin

摘要

Probiotic microorganisms that have biological activity in the host can produce postbiotics, which are non-viable bacterial products or metabolic byproducts. Bacteriocins are proteinaceous toxin produced by bacteria to inhibit the growth of closely related bacteria. There has been intense study into the incorporation of bacteriocins into packaging films to control food deterioration and pathogenic organisms for the past 10 years. Antimicrobial packaging material reduces bacteria growth on food surfaces along with bacteriocin. This protocol encompasses brief introduction, functions of bacteriocins, cultivation of lactic acid bacteria, and development of antimicrobial packaging film and evaluating its effectiveness.
