Biopreservation of Food Using Bacteriocin
摘要
This chapter describes the process involved in (1) the preparation of coating solution containing bacteriocin (nisin), (2) the coating of nisin on plastic film, (3) the determination of the antibacterial activity of nisin-coated plastic film, and (4) the study on the effectiveness of nisin-coated plastic film for biopreservation of food (cheese) with food pathogen Listeria monocytogenes as test bacteria.
