摘要

Lactic acid bacteria produce gamma-aminobutyric acid (GABA) during fermentation as a defense mechanism to maintain viability in acidic conditions. Gamma-aminobutyric acid is one of the neurochemicals derived from gut bacteria. The majority of human gut research focuses on the composition of the gut microbiome and changes in gut microbiota with varied diets. This protocol illustrates the GABA, which has well-known favorable bioactivities like neurotransmitter and neurotransmission.
