摘要

Postbiotics are soluble metabolites produced during the growth as well as fermentation of food-grade bacteria in complex microbiological cultures, food, or in the gastrointestinal tract. They are widely distributed high and low molecular weight bioactive metabolites; the most recent research on creating and using postbiotics from a variety of probiotics is very encouraging, but it is important to analyze the chemical makeup of postbiotics and run antagonistic tests in order to determine whether they are effective in affecting microorganisms that affect food and food products. As a result, foods can actually profit from a recognized postbiotic with a known effect. Cell-free supernatants known as postbiotics contain a complex mixture of metabolites secreted by probiotics, including enzymes, secreted proteins, short-chain fatty acids, vitamins, secreted biosurfactants, amino acids, peptides, and organic acids, and so on. Paraprobiotics are “inactivated microbial cells of probiotics (intact or ruptured, containing cell components also including peptidoglycans, teichoic acids, surface proteins, and many more.) or crude cell extracts (i.e., with complex chemical composition).”
