摘要

Recent years have observed the use of the term “postbiotics,” a new concept related to probiotics. This term describes bacteria-derived extracts with bioactive potentials that are beneficial to the host. Despite the studies on postbiotics discussing their antimicrobial, antioxidant, antiproliferative, immunomodulatory, and anti-inflammatory activities, several aspects of postbiotics are poorly understood. Even so, the potential of postbiotics in the development of biotechnological products will continue to escalate. Exopolysaccharides (EPS) are extracellular postbiotic compounds composed of monosaccharides biosynthesized mostly by lactic acid bacteria. Their functional properties and utilization are highly impacted by the yield obtained during extraction. They offer a wide range of applications in food, medicine, and biotechnological industries. In order to understand the nature of EPS postbiotics, their structural and chemical diversity must be studied. This chapter summarizes the protocol involved in the preparation and characterization of EPS postbiotics from lactic acid bacteria.
