Next-Generation Sequence Analysis of Postbiotics in Fermented Dairy Food

Fermented foods contain numerous active microbial populations that produce a variety of metabolites that aid in the fermentation process. NGS is a parallel sequencing method with extremely high throughput, adaptability, and economy. The technique is used to identify the nucleotide order in whole genomes or individual DNA or RNA fragments. Lactobacillus is a diverse genus of Gram-positive, facultatively anaerobic, non-spore-forming, hetero- or homofermentative bacteria found in a wide range of nutrient-rich habitats. The current work examines Next-Generation Sequencing (NGS) analysis on fermented dairy milk products.
