Nonthermal Preparation of Postbiotics
摘要
Nonthermal techniques have different strategies for preserving foods. As a result, developing packaging for nonthermal processing needs an understanding of packaging material features (mechanical and barrier) as well as the interaction of packaging materials and food components during nonthermal processing. Nonthermal food preservation technologies are of interest to food scientists, producers, and consumers since they have little influence on the nutritional and sensory qualities of foods and lengthen the shelf life by suppressing or destroying microbes. They are also thought to be more energy-efficient and maintain higher quality qualities than traditional heat-based procedures. In food processing, nonthermal physical processes are emerging as prospective alternatives to thermal and chemical activities. The current study looks into numerous nonthermal approaches that have been identified for potent bacteria.
