Productivity of Cows, Quality of Their Milk, and Improvement of Its Technological Properties As a Result of Including the Biopinnular Sorption–Probiotic Supplement in Their Diet

Abstract—

The paper reports the results of the experimental work devoted to studying the impact of sorption-probiotic supplement (SPS) Biopinnular in the diet of cows on productivity indices, milk quality, and its technological properties. A scientific and economic experiment was conducted under the conditions of the OOO Agrofirma Tetyushskoe dairy complex in Ulyanovsk oblast on four groups of white-and-black cows with 26 animals in each. Biopinnular SPS was included in the diet of the animals from the groups II, III, and IV in the dosage of 0.25, 0.5, and 0.75% of its dry matter, respectively. In the course of the experiment, milk productivity of cows was recorded based on the results of control milkings, and the chemical composition of milk was determined. At the 3–4 month of lactation, technological properties of milk obtained from the experimental cows and cream, butter, and cottage cheese yield from 1 kg of milk, as well as milk fat extraction rate, were studied. It was found that the use of the studied supplement increased milk productivity (by 3.46–12.60%) and mass fractions of fat (MFF) and protein (MFP). Milk obtained from these cows was characterized by increased lactose content, milk solids non-fat (MSNF), and the optimal ratio of MFF : MFP and MFP : MSNF compared to the control, which indicates its better technological adequacy for cheese production. A higher rate of fat extraction from milk during separation (97.55–97.83%) vs. 96.84% in the control was obtained, which primarily affects the yield of cream and butter from 1 kg of milk. More pronounced biological and economic effect was shown by the animals that received 0.25 and 0.5% of Biopinnular SPS of the dry matter of the diet. In the same groups, an additional revenue from the sale of milk in the amount of 5.55 and 2.78 rubles per 1 ruble of the supplement cost was obtained.
