Chitin and by-products production from shrimp residues via lactic acid fermentation, sonication, and solar drying

The aim of this study was to evaluate the production of biological chitin through lactic acid fermentation (LAF) and solar-drying techniques. Shrimp wastes were pretreated by sonication and inoculated with Lactiplantibacillus plantarum, fermentation was conducted for 144 h at 35 °C. The pH, sugar, and organic acid content were determined as LAF variables by HPLC. The resulting chitin was then solar-dried, and measurements were taken for extraction yield, moisture content, demineralization, and deproteinization. FT-IR analysis was used to examine the functional groups present in the resulted biopolymer. Chitin yields of 58.42 ± 2.44 and 61.94 ± 1.22% were obtained from non-sonicated and sonicated shrimp residues, respectively. FT-IR analysis confirmed the presence of characteristic bands for α-chitin, indicating the feasibility of the eco-friendly methods for chitin extraction.
