<p>A total of 770 school-aged children aged 7 to 12 years were recruited from public and private elementary schools in Hidalgo, Querétaro, Mexico City and the State of Mexico using non-probability convenience sampling. The study aimed to design, evaluate, and validate a digital instrument for assessing dietary habits and eating practices among Mexican schoolchildren. The complete validation process was conducted in three independent stages over an eight-month period, utilizing a self-administered questionnaire delivered through Google Forms. Within this timeframe, the psychometric analysis phase was explicitly performed from October to December 2020. Psychometric analysis demonstrated adequate validity and reliability of the instrument. Exploratory factor analysis supported a two-factor structure corresponding to eating practices and eating habits. Internal consistency was acceptable, with an overall Cronbach’s alpha of 0.819, while the eating practices and eating habits dimensions showed alpha coefficients of 0.802 and 0.676, respectively. The questionnaire was culturally adapted and validated for the Mexican school-age population, demonstrating suitability for assessing dietary behaviors in this demographic group. The instrument also represents a useful tool for evaluating nutrition literacy interventions and school-based nutrition programs.</p>
