Objective <p>To identify and analyze, through a scoping review of the scientific literature, the most commonly used methods for evaluating hospital menus.</p> Methods <p>This scoping review was conducted in January 2025, using five databases and applying filters for publications from 2014 to 2025. Studies that evaluated hospital menus using quantitative, qualitative, or mixed methods were included. Exclusion criteria involved studies focusing on menus from other institutions or commercial services, reviews, conference abstracts, evaluations without descriptive results, and studies unrelated to the topic. Screening was performed using Rayyan, with a double-blind review process. After full-text reading of the selected articles, the extracted data included study characteristics and menu evaluation methods.</p> Results <p>A total of 23 articles were selected: 12 used quantitative methods, 7 used qualitative methods, and 4 applied mixed methods to evaluate hospital menus. Regarding country of origin, 43.5% were Brazilian studies, while the remainder came from the Americas and Europe. The methods used were diverse, with particular emphasis on energy and nutrient assessment and their adequacy, as well as the Qualitative Evaluation of Menu Preparations method.</p> Conclusion <p>Most studies employed quantitative methods for menu analysis, with a notable lack of research using more comprehensive mixed methods. Additionally, there was an evident lack of standardization in the evaluation approaches, with different studies analyzing varying elements for the same purpose.</p>
