In Vitro Assessment of Biological Activities and Chemical Profile of Whole Seed Extract of New Algerian Durum and Soft Wheat Varieties

The aim of the present work is to determinate the biological activities and to characterize the chemical composition of new varieties of Algerian durum and soft wheat seeds using liquid chromatography-electrospray ionization-mass spectrometry (LC-ESI-MS). It has been revealed the presence of several secondary metabolites specifically phenolic compounds, terpenoids, saponins, coumarins, tannins, and flavonoids. polyphenols, flavonoids and condensed tannins were quantified and have given variable amounts between the samples of interest. In addition, the LC-ESI-MS analysis detected in all genotypes the presence of common compounds namely: quinic acid, cholorogenic acid, syringic acid, o-coumaric acid and rutin. Alternatively, the bioactivity of wheat seed extract was evaluated by determining their antioxidant activities, α-amylase inhibition ability, and photoprotective capacity. The extracts from the two durum wheat seeds exhibited a moderate antioxidant potential in DPPH, ABTS, CUPRAC and reducing power. Although it was more interesting than those of soft wheat extracts. Furthermore, all genotypes demonstrated non-negligible photoprotective property and intriguing α-amylase inhibitory activity. The findings issued from the present research show various beneficial effects of novel Algerian wheat varieties and could be considered a source of varied bioactive molecules. Incorporating wheat seeds into a balanced diet can contribute to overall health and well-being, offering numerous nutritional and health benefits. Wheat seeds can play a valuable role in supporting the health, productivity, and welfare of various livestock species.
