Abstract <p>This study examined the physiological traits and sugar metabolism of various pear (<i>Pyrus</i> spp.) varieties at 30-day intervals. The results showed a significant increase in sugar accumulation and fruit weight, while acidity and firmness decreased markedly during the developmental stages. At 70 days after full bloom (DAFB), total antioxidant activity reached 70%, with total phenolic content at 688 mg/kg and total flavonoid content at 657 mg/kg across all varieties. However, as the fruit neared horticultural maturity, these values dropped sharply to approximately 36%, 343 and 474 mg/kg, respectively. This suggests that the highest antioxidant levels occur at 70 DAFB, which can enhance free radical scavenging properties. Among the varieties tested, 'Patharnakh' exhibited the highest activities of sorbitol dehydrogenase (0.81 nmol/min/mg protein), sorbitol oxidase (0.43&#xa0;nmol/min/mg protein), and acid invertase (0.26 µmol/min/mg protein). Consequently, at 160&#xa0;DAFB, 'Patharnakh' displayed the most favourable quality attributes at full maturity compared to other varieties. Additionally, harvesting of the fruits at full maturity optimizes their nutritional value for consumers.</p>
