In vitro Validation of the Organic and Mineral Antioxidant Activity of Lactic Acid Bacterial Strains from Intestinal Microbiota

Recently, research on natural biological sources, both plantand microbial, has intensified in order to develop safer naturalantioxidants to replace their synthetic counterparts. The presentstudy aimed to evaluate the antioxidant activities of five species,with several microbial strains of Lactobacillus as potentialnatural antioxidants, for their production of important metabolitesin various biological activities, using five distinct oxidativeinhibition methodologies. This study investigated the antioxidant propertiesof 20 strains of Lactobacillus throughin vitro methods. The assays conducted included the scavenging ofthe DPPH free radical, chelation of metal ions (Fe2+),scavenging of hydroxyl and superoxide radicals, and assessment ofanti-lipid peroxidation activity. Analysis of the DPPH free radical scavengingability revealed that L. plantarum IM0187exhibited the highest activity (of 90.03 ± 0.31%). The L. cruvatus IM0285 exhibited thehighest Fe2+ chelation activity at 92.22± 3.11%, whereas L. plantarum IM0187demonstrated the lowest chelation activity at 20.55 ± 0.05%. Interms of hydroxyl radical scavenging, the strains with the highestactivities were L. sakei IM0245(83.12 ± 2.63%), L. brevis IM0218(79.08 ± 1.55%) and L. curvatus IM0286(78.84 ± 1.35%). Analysis of superoxide radical scavenging activitiesamong the microorganisms revealed values ranging from 21.72 ± 1.16%to 7.98 ± 0.86% for L. salivarius IM0309and L. brevis IM0218, respectively.The highest anti-lipid peroxidation activity was recorded for strain L. cruvatus IM0285 (64.3 ± 3.47%).These results suggest their potential application as natural andprotective antioxidants in the contexts of nutraceutical and probiotictechnology, especially biopharmaceuticals.
