Abstract <p>The oxidative degradation by interaction with hydroxyl and hydroperoxyl radicals and UV radiation at λ = 253.7 nm has been studied for bovine serum albumin; a mixture of the fluorescent amino acids tyrosine, tryptophan, and phenylalanine; and separately the same aromatic amino acids included in albumin. The starting materials and reaction products have been identified by fluorescence in the two-dimensional scanning mode. To analyze the results, Stern–Volmer fluorescence quenching constants have been calculated. The mechanisms of radical reactions and UV radiation-induced reactions with protein and individual amino acids are compared on the basis of the Stern–Volmer constants.</p>
