The Antimicrobial Activity of Metabolite Complexes of Lactobacilli against Pseudomonas aeruginosa

The aim of this study was a comparative assessment of the antagonistic activity of the culture collection strains of Lactobacillus helveticus NK1, Lacticaseibacillus rhamnosus F, and fungal kefir starter culture, as well as their metabolic complexes against representatives of Pseudomonas aeruginosa strains. As a result of the study, the high antagonistic activity of the culture collection lactobacilli, fungal kefir starter culture, and their metabolic complexes against conditionally pathogenic bacteria P. aeruginosa, both for the culture collection type strain and wild-type isolates, was confirmed. The L. helveticus NK1 strain was a more active antagonist of P. aeruginosa compared to L. rhamnosus F, which might be due to its ability to produce peptides with antimicrobial activity. These data confirmed the prospects of using the L. helveticus NK1 strain and fungal kefir starter culture for the development of a fermented milk product enriched with metabolites of probiotic cultures. The results justify further studies to determine the mechanisms of their antimicrobial action.
