<p>Pandemics threaten the agrifood systems on which societies depend, yet their effects on these critical systems receive little attention. This review examines the relationship between pandemics and food through a One Health lens, from their origins out of interactions between humans, animals, and the environment to their impact on food safety and agrifood systems. It then proposes actions to strengthen the preparedness of these systems to defend against these threats.</p>
