<p>Broccoli (<i>Brassica oleracea</i> L. var. italica) is widely recognized for its nutrients dense composition of health promoting bioactive compounds; however, its high moisture content limits shelf life and industrial utilization. This study aimed to evaluate nutritional composition, phytochemical profile, antioxidant potential and functional properties of sun-dried broccoli powder. The fresh broccoli sample was sun dried to reduce moisture content and enhance storage stability. The proximate composition (moisture, fiber, ash, protein, fat and carbohydrates) of sample was measured, while antioxidant activity was determined by 2,2-diphenyl-1-picrylhydrazyl (DPPH) and ferric reducing antioxidant powder (FRAP) and phytochemicals was determined by total phenolic content (TPC) and total flavonoids content (TFC) using water, hexane and ethanol as solvent. Moreover, color parameters L*, a*, b* and functional attributes such as water holding capacity, oil holding capacity, swelling power, and bulk density were also determined. The sun-dried broccoli powder was rich in carbohydrates (42.15%), fiber (18.30%), protein (18.71%), and ash (5.19%). The water extracts exhibited highest TPC, 287.5&#xa0;mg GAE/g, TFC, 130.0&#xa0;mg QE/g, DPPH, 95.5% inhibition and FRAP 1032.9&#xa0;µmol Fe<sup>2</sup>⁺/g of sun-dried samples. Color intensity was preserved and functional attributes in term of foaming stability (40.43 ± 2.35), solubility index (5.82 ± 2.01), water absorption capacity (7.01 ± 1.47), oil absorption capacity (2.46 ± 0.40) and bulk density (0.54 ± 0.04) were enhanced of sun-dried samples. In conclusion, sun drying concentrates the nutritional composition, antioxidant potential and functional attributes of broccoli powder and can be further used in functional food products development.</p> Graphical Abstract <p></p>
