Nutritional and phytochemical characterization of Allium carolinianum Redoute, a wild garlic species from cold Desert, Ladakh

Allium carolinianum Redouté (Stout Alpine Onion) is a significant wild plant in the trans-Himalayan region of Ladakh, traditionally used as a spice and valued for its potential culinary and medicinal benefits. This study presents the first comprehensive analysis of the nutritional profile, phytochemical content, and antioxidant activity of its aerial parts (leaves and scapes). Using analytical techniques including GC-MS, HPLC, and FTIR, we identified a rich profile of bioactive compounds. The plant exhibited a high nutritional value, with a particularly notable dietary fiber content. The aerial part of A. carolinianum, exposed to the harsh cold desert stress, revealed significant bioactive compounds and polyphenols. Key findings include the identification of significant polyphenols and the organosulfur compound trisulfide, methyl 2-propenyl (1.79%), which contributes to its distinct flavor. FTIR analysis confirmed the presence of seven functional groups, including a prominent phenyl C = C stretch indicative of aromatic compounds. These results, many of which are reported for the first time in this species, underscore the substantial potential of A. carolinianum as a nutritionally rich and clinically valuable functional food.
