<p>Phytic acid, a major phosphorus storage compound in wheat (<i>Triticum aestivum</i> L.), can accumulate to levels as high as 35%, acting as an anti-nutritional factor by chelating micronutrients such as Fe, Mg, Ca, Zn, and Cu, thereby reducing their bioavailability to humans. In this study, 12 wheat genotypes from F2 wheat lines (low phytate × high phytate) were assessed for their phytic acid contents and nutritional quality. The genotypes exhibited significant variability in phytic acid content, ranging from 0.48 to 1.95%, with an average of 1.24% and a variability (CV %) of 24.63%. Low phytate content positively influenced the nutritional and physical parameters of wheat genotypes, while high phytate had a negative impact on most measured characteristics. The average seed weight was 0.25&#xa0;g, average seed volume was 0.21&#xa0;ml, and average seed density was 1.25&#xa0;g-ml-1. Overall, a significant negative correlation was observed between seed phytic acid and seed weight (<i>p</i> &lt; 0.05), while volume and density were also negatively related, although non-significant, across all 12 wheat samples.</p> Graphical Abstract <p></p>
