<p>Wheat hydration is a critical pre-processing step involved in various processes that influence the quality of the end product. During the study, wheat was hydrated at a temperature range of 40–90&#xa0;°C. Peleg model was used to analyze and describe the hydration process. Peleg model constants, i.e., rate constant and capacity constant, were evaluated with temperature change. These constants indicate that at higher temperature levels, the water absorption rate increases and equilibrium moisture content attainment is faster. Thermodynamic analysis shows the process is endothermic, requiring less energy at a higher temperature level with a decreasing positive-enthalpy value. Entropy and Gibbs’ free energy changes also support these facts. This study can be used for optimization of the wheat hydration process, which can reduce processing time and energy consumption, improve product quality, and enhance the efficiency of the process.</p>
