Effectiveness of Zinc Nanoparticles Conjugated with Nisin or Natamycin on the Microbial and Sensory Properties of Yoghurt

This study aims to assess the effectiveness of zinc nanoparticles (Zn-NPs) singly or when conjugated with either Nisin or Natamycin on the viable microbial counts, which included viable total microbes, Staphylococcus, Coliform, Lactobacillus, and fungal counts and sensory attributes of yoghurt during a 20-day storage at 4 ± 2 °C. The results indicated that the Zn-NPs, either alone or in conjugated with Nisin or Natamycin, were significantly (p < 0.05) decreased in microbiological content compared to the control group (G1), which exhibited an increase in microbial counts. The sensory properties of yoghurt, encompassing colour, taste, odour, texture, and overall quality, were all relatively similar at the beginning of storage. However, between days 10 and 20 of storage, a significant difference was observed between the groups treated with Zn-NPs alone or combined with Nisin or Natamycin compared to the control group G1 characteristics.
