Physiochemical Characterization of Pectin Extracted from Different Banana Cultivars of Assam, India

Pectin is a polysaccharide present in plants cell wall and are widely used in food and pharmaceutical industries as additives. The present study investigated the pectin yield and their characterization from the peel of five different banana cultivars of Assam from Guwahati region. The highest yield (18.54 %), equivalent weight (1785), esterification percentage (92.44%) was obtained from Musa splendida. The methoxyl content (6.82%) and total anhydrouronic acid (52.44%) was found to be highest in Musa balbisiana. Total reducing sugar was found to be highest in Musa acuminata. Suitability of pectin for different purpose is determined by methoxyl and anhydrouronic acid content. The higher methoxyl content and anhydrouronic acid content was found in Musa balbisiana, therefore, pectin extracted from this variety could be a promising one for food and pharmaceutical additives.
