Extraction of insoluble dietary fiber from guava processing waste using deep eutectic solvents: a sustainable chemistry approach

Conventional extraction techniques have been much explored in literature. Recently, the trend has been shifted to green extraction techniques. Guava pomace, a by-product of a major processing crop of Northern India, is often known for its high dietary fiber content. Therefore, the present study attempts to discover possible green extraction methodologies for the same. In this study, a comparison of the three different extraction techniques has been done on the basis of structure and techno-functional properties of dietary fiber. IDF (insoluble dietary fiber) was extracted using acid (IDF-A), enzyme (IDF-E), and ultrasound-assisted deep eutectic solvents (IDF-D). Among the extraction techniques, ultrasonic-assisted deep eutectic solvents resulted in the maximum extraction yield of 38.24%. Structural and techno-functional characteristics of IDF-D exhibited optimum structural properties with enhanced glucose absorption capacity and cholesterol absorption capacity compared to IDF-A and IDF-E. Rheological studies indicated the prevalence of enzymatic extraction (IDF-E) over acid and ultrasonic assisted DES extraction. Therefore, the present study highlights the potentiality of a novel extraction method for dietary fiber from guava pomace which also contributes to waste valorization.
