Effect of ultrasound on the extraction of bioactive compounds from Jamun (Syzygium cumini L.) seeds

Jamun seeds, a by-product of the fruit processing industry, offer a sustainable solution to waste management while providing a rich source of bioactive and nutraceutical compounds. This study evaluated ultrasound-assisted extraction (UAE) against conventional methods, demonstrating UAE’s efficiency in achieving higher yields of bioactive compounds in a shorter time. The UAE process was optimized at 40 °C, 72% ethanol, 40% amplitude, and 10 min extraction time, yielding a total phenolic content (TPC) of 150.67 mg GAE/g, total flavonoid content (TFC) of 89.34 mg CE/g, DPPH activity of 93.68%, FRAP activity of 68.98 mg AA/g, and tannic acid content of 29.76 mg TAE/g. FTIR and HPLC analyses confirmed the presence of key bioactive compounds, including epicatechin, gallic acid, ellagic acid, quercetin, catechin, and tannic acid. These findings demonstrate that at optimized conditions of temperature, time, solvent concentration, and amplitude, UAE is a superior technique for maximizing the yield of bioactive compounds. This method not only enhances the valorization of Jamun seed waste but also promotes sustainable utilization and supports the development of functional food products.
