<p>The current research aimed to develop and evaluate an instant soup mix (ISM) by blending sialoglycoprotein hydrolysate (SGPH), which has antihypertensive and antioxidant properties, derived from <i>Labeo rohita</i> (rohu fish) roe. The optimal formulation of SGPH-ISM, identified through Response Surface Methodology, consists of 9% SGPH, 45% corn starch, and 10% seasoning mix. Analyses revealed that SGPH-ISM contains 18.67 ± 0.37% protein, 65.35 ± 0.36% carbohydrates, 2.96 ± 0.12% fat, 9.01 ± 0.27% ash and 4.04 ± 0.16% moisture content. Furthermore, SGPH-ISM exhibited ACE-inhibitory activity (26.18%), DPPH (64.89%) and ABTS (38.89%) radical scavenging activity, and FRAP activity (147.80&#xa0;µM TE/g). SGPH-ISM consist of good amount of essential amino acids and demonstrated good physical properties comparable with commercial soup mix. Stability testing indicated that SGPH-ISM can be stored for six months at 25&#xa0;°C in metallic polyester pouches without compromising its nutritional value and bioactive components. Therefore, SGPH-ISM can be used as a nutrient-rich product with antihypertensive and antioxidant benefits.</p>
