<p>Present study aim was to envisage the variation in physicochemical attributes, sugar composition and antioxidant activities for selection of an appropriate variety of sweet potato cultivar for slices as a potential industrial application. Carbohydrate, crude protein, crude fat, crude fiber, ash contents were found in the range of 73.87 to 81.50, 6.90 to 11.04, 0.33 to 0.75, 3.21 to 5.20 and 2.71 to 3.92g/100&#xa0;g&#xa0;DW, respectively. Cultivar of Funing-12 followed by Quan-19, Ji-17-52 and Ji-25 displayed the maximum values of essential and non essential amino acids (46.74, 42.55, 36.93 and 36.03 g/100&#xa0;g&#xa0;DW respectively). Pushu 32 showed the highest sweetness with contributing sucrose, fructose and glucose (14.22, 1.34 and 1.95&#xa0;g/100&#xa0;g&#xa0;DW, respectively). Pushu 32, Jinshan-108 and Jizi-2 exhibited the maximum iron chelating capacity with respective values of (11.35, 6.86 and 6.01&#xa0;µg&#xa0;TE/g&#xa0;DW respectively). Pushu 32 orange fleshed sweet potato prepared slices showed the maximum nutritional and functional properties that could be recommended as healthy diet.</p> Graphical abstract <p>Texture profile, centesimal, minerals, amino acid composition, sugar content and variation in antioxidant activity of sweet potato slices were significantly influenced by the various sweet potato varieties.
