摘要

Carotenoids are a diverse group of pigments found in plants, algae, and microorganisms, known for their antioxidant properties and health benefits. The extraction of carotenoids from various sources has gained significant attention due to their wide-ranging applications in the food, and other industries. Efficient extraction methods are essential for isolating these valuable compounds while preserving their structural integrity and bioactive properties. Enzymatic approach has emerged as a promising alternative, offering improved efficiency, selectivity, and eco-friendliness. Traditional extraction methods, such as solvent-based and ultrasound-assisted extraction, are discussed to provide context. This review analyzes recent advancements in enzymatic extraction, discussing the types of enzymes employed and their mechanisms of action. Additionally, it compares the effectiveness of enzymatic methods with conventional techniques, highlighting advantages and limitations. The potential of combined methodologies to enhance extraction efficiency and sustainability is also discussed. Finally, the article discusses challenges and future perspectives directions in enzymatic carotenoid extraction.
