Purpose <p><i>Diospyros kaki</i> fruits have been frequently utilized in traditional medicine for the treatment of different pathologies. This delicious fruit offer excellent benefits to the human health.</p> Methods <p>The present study aimed to evaluate the nutritional value of <i>Diospyros Kaki</i> and the effect of the extraction solvent on phenolic compounds levels and biological activities in terms of antioxidant power and antibacterial capacity. We also evaluated the in vitro digestibility of fruits in ruminants by the gas production technique.</p> Results <p>The HPLCPDAESIMS/MSLC-HRESIMS analysis proved the presence of 12 phenolic compounds and demonstrated that the quinic acid is the major constituent of the three types of extracts. The result of this study has strongly indicated that the total polyphenols, flavonoids and tannins were significantly higher in the hydro-ethanolic extract compared to other extracts. Similarly, the hydro-ethanolic extract presented the high antioxidant and antibacterial activities. In the other hand, the obtained results showed that the digestibility of dry matter by the in vitro fermentation revealed a significant difference between the animal species.</p> Conclusion <p>In conclusion, our findings showed that the different extraction solvents selected exerted significant biological activities (antioxidant and antimicrobial potentials) and a chemical composition that could be suitable for ruminant feeding. They can be considered as potential natural antioxidants and antibacterials.</p> Graphical Abstract <p></p>

Purpose

Methods
