Wheatgrass pigments: germination, extraction, stability, and its therapeutic potential in health and diseases

Wheatgrass, rich in minerals and pigments, is well-known for its beneficial impact on health. The pigments found in wheatgrass, specifically chlorophyll, carotenoids, and anthocyanins, participate in various biological processes, including growth, stress resistance, and photosynthesis. Wheatgrass juice possesses the capacity to function as natural food colorants or nutritional supplements, providing antioxidant benefits. Recent advancements have focused on improving the extraction process of bio-components and maintaining their integrity. To maintain the stability of health supplements, including capsules and tablets of wheatgrass, they should be stored in airtight conditions with non-transparent packaging. Encapsulation techniques have shown the ability to preserve the antioxidant property of wheatgrass. Both in vitro and in vivo experiments have revealed that wheatgrass has the capacity to protect against oxidative stress, offering a choice for preventing various health problems in the human body. Further, large-scale clinical trials will add to the current understanding of wheatgrass health benefits.
