Reduction of salmon roe allergy risk through fish meat consumption using triploidization technology

Vitellogenin (Vg), a yolk protein precursor synthesized in female salmonids during the vitellogenic stage, has been reported to contain an identical amino acid sequence to that of the major fish roe allergen, the β′-component (β′-c), suggesting a potential allergy risk from consuming viscera and muscle. In contrast, sterile triploid fish, which are commonly produced in the aquaculture industry, may lack β′-c-like allergens because of their underdeveloped ovaries, even among females. In this study, we examined the potential of sterile triploid rainbow trout as a low-allergen fish meat alternative by measuring the levels of β′-c-like allergens in the muscle and visceral tissues of commercially available triploid female rainbow trout. The results revealed that triploid fish exhibited significantly reduced levels of β′-c-like allergens compared with diploid fish, indicating an extremely low risk of fish roe allergy upon consumption. These findings suggest that triploid fish can be effectively used as a means to reduce the risk of fish roe allergy. To put this knowledge into practical use, it is necessary to establish a reliable method for triploidization or a simple method for determining ploidy status to prevent contamination with Vg-containing diploid fish.
