<p>The worldwide demand for salmon as a food source is high, with Atlantic salmon farming supporting a stable global supply. Salmon is rich in omega-3 fatty acids, vitamin D, and vitamin B<sub>12</sub>, making it significant in modern nutrition. Among these nutrients, vitamin B<sub>12</sub> plays a critical role in supporting neurological function and red blood cell formation, making it an essential component of a balanced diet. This review focuses particularly on vitamin B<sub>12</sub>. A single portion of salmon fillet (100&#xa0;g) provides 3–9&#xa0;µg of vitamin B<sub>12</sub>, easily meeting the daily recommended intake for adults. Salmon by-products also might contain substantial amounts of vitamin B<sub>12</sub>, which could be harnessed for the development of dietary supplements and functional foods. However, further studies are required to provide accurate and reproducible estimates of vitamin B<sub>12</sub> levels in different salmon parts, as well as to assess the bioavailability of vitamin B<sub>12</sub> from these sources under varying dietary conditions.</p>
