<p>Carbon dots&#xa0;(CDs) were efficiently synthesized from red plum (<i>Carissa</i> sp.) through the hydrothermal method, and their physicochemical properties, structural characteristics, and applications were systematically investigated. The yield of CDs was quantified as 112.50 ± 2.50&#xa0;µg/mL for whole fruit-derived samples (BC-WF-CDs) and 103.33 ± 2.31&#xa0;µg/mL for those obtained from the residue of the anthocyanin extraction process (BC-RES-CDs). Spectroscopic analyses confirmed the presence of characteristic functional groups and inherent&#xa0;optical features of the synthesized CDs. TEM micrographs revealed a spherical morphological structure and a size distribution ranging from 3 to 13.5&#xa0;nm. BC-WF-CDs exhibited higher antifungal efficacy against <i>Aspergillus parasiticus</i> and <i>Aspergillus flavus</i>, compared to BC-RES-CDs (<i>P</i> &lt; 0.05). Nevertheless, BC-RES-CDs exhibited superior antioxidant capacity, with higher DPPH radical scavenging activity at dispersion levels exceeding 40&#xa0;µg/mL (<i>P</i> &lt; 0.05). Antibacterial assessment further revealed distinct differences in the potency of CDs synthesized from different starting materials. BC-WF-CDs demonstrated superior antibacterial activity even at lower concentrations, which achieved both microbial inhibition and killing. The conducted challenge study to examine the efficacy of CDs from BC-WF at different concentrations (300 and 600&#xa0;mg/kg) showed the inhibited the growth of <i>A. flavus</i> on dried and salted Nile tilapia fillets more effectively than the positive control, potassium sorbate (300&#xa0;mg/kg). Peroxide value and thiobarbituric acid reactive substances values of samples that were treated with BC-WF-CDs at 300&#xa0;mg/kg (CD300) were lower or comparable with the commercial synthetic positive control, PS300, during 9-days&#xa0;storage time. Thus, the CDs synthesized from different precursors possessed significant differences in&#xa0;characteristics and inhibitory efficacies.</p>
