Polysaccharide-Based Intelligent Food Packaging: Advancements, Applications, and Future Challenges

The growing consumer demand for health-promoting food products has rendered conventional packaging, which relies on predetermined “best before” or “expiration dates” established under specific storage and usage conditions, inadequate to meet current needs. In response, the development of intelligent packaging systems that incorporate sensor technologies for real-time monitoring of environmental conditions and product quality has garnered considerable attention and momentum. Polysaccharide-based materials, which are derived from renewable sources such as plants, algae, and microorganisms, possess inherent advantages including biodegradability, renewability, biocompatibility, multifunctionality, and wide availability. These attributes reinforce their potential to substitute petroleum-based alternatives while mitigating associated environmental and health issues. This paper presents a thorough review of polysaccharide-based intelligent packaging, elaborating on diverse polysaccharide sources and evaluating cutting-edge methodologies for food quality monitoring, including thermal, gaseous, pH, and chemical analyses. The problems with using polysaccharide-based materials in applications like freshness indicators, time–temperature indicators (TTIs), and gas indicators are summarized, along with novel insights. The study evaluates the impact of polysaccharide incorporation on the bioactive (e.g., antimicrobial and antioxidant ability) and physical properties of intelligent packaging systems. The regulatory frameworks for polysaccharide-based packaging materials in different regions are discussed. These materials face challenges like limited water resistance, poor mechanical properties, reduced functionality, additive migration, and high raw material costs, despite their potential. Future research should focus on prioritizing the integration of advanced technologies, enhancing functionality, improving environmental adaptability, and ensuring cost-effectiveness to facilitate broader application in food packaging.
