Preparation and characterization of gellan gum/sodium alginate composite film incorporated with curcumin nano-emulsion and its application in the preservation of basa fish

In order to promote sustainable development, gellan gum (GG)/sodium alginate (SA) composite film loaded with curcumin (Cur) nano-emulsion (E) was developed and applied to storage of basa fish to improve product quality. FT-IR confirmed the presence of hydrogen bonding between curcumin and GG/SA structure. SEM revealed that emulsions dispersed well in GG/SA polymer matrix. The elongation at break of the composite GG/SA film was increased with the insertion of emulsion. The composite films loaded with curcumin emulsion enhanced UV blocking and moisture barrier compared with GG/SA films. The DPPH and ABTS assays showed that the gellan gum/sodium alginate emulsion film loaded with 16 mg/mL curcumin exhibited the highest antioxidant activity, with values of 79.72% and 67.24%, respectively. The antibacterial experiment showed that the curcumin emulsion films could inhibit the growth of S. aureus, and E. coli, yielding inhibition zones of up to 8.88 mm and 8.25 mm respectively. Additionally, the application on basa fish packaging showed the composite film had better storage effect on reducing the pH, TVB-N, and mass loss changes of the fish. The fabricated composite film possesses potential for packaging with environmentally friendly characters.
