<p>Strawberries have a very short postharvest shelf life due to rapid microbial deterioration and dehydration. This study examined the effect of edible coatings based on native and modified mango kernel starch (MKS) on the shelf life and quality retention of strawberries stored at 0–1&#xa0;°C. Heat moisture treatment (HMT), ultrasound (US), sodium trimetaphosphate (STMP), and octenyl succinic anhydride (OSA) were used to modify MKS. Physiological loss in weight (PLW), decay incidence, firmness, respiration rate, and consumer willingness to buy were evaluated during storage after coating fresh strawberries with native and modified starch solutions. Compared with uncoated fruits, OSA- and STMP-modified starch coatings significantly reduced weight loss, maintained gloss and firmness, and delayed microbial spoilage for up to 18 days. These findings demonstrate the potential of utilizing mango industrial waste by converting it into modified MKS coatings as an effective postharvest strategy to extend strawberry shelf life while offering an environmentally sustainable approach to managing agro-industrial mango waste.</p>
