<p>Seed germination has been proposed as a pretreatment method to enhance the nutritional quality of vegetable oils; however, changes in minor components and antioxidant activities of sunflower seed oil during germination remain unclear. In this study, sunflower seeds underwent hydroponic germination for 72 h, and the nutritional quality of the extracted oil was assessed. Oil content significantly increased by 1.23 ± 0.28% in sunflower seeds after 24 h of germination. Total phenol and flavonoid contents in the germinated oil increased by 2.01-fold and 2.87-fold, respectively. The highest DPPH and ABTS radical scavenging activities were observed in oil extracted from seeds germinated for 40 h. Furthermore, the α-tocopherol content in germinated sunflower seed oil increased by 188.97 mg/kg, and there was a significant improvement in the fatty acid profile. These findings suggest that sunflower seed oil from 32-h germinated seeds exhibits high antioxidant activity and nutritional value, offering insights for industrial applications.</p>
