The impact of probiotic Lactiplantibacillus plantarum S61 and prebiotic Xylooligosaccharide on the functional properties of fermented orange juice

This study aimed to evaluate the impact of probiotic Lactiplantibacillus plantarum S61 and prebiotic Xylooligosaccharide (XOS) on the physicochemical (pH, Titratable acidity, and °Brix), functional (color, total phenolic content, antioxidant activity, Vitamin C content), and sensory properties of orange juice during fermentation at 37 °C for 48 h. The fermented juice displayed favorable physicochemical characteristics (pH, Titratable acidity, and °Brix), important growth of the probiotic L. plantarum S61 (p < 0.05), and enhanced color and shelf life of the final product. The results showed that the values of total phenolic content, antioxidant activities, and Vitamin C range between 55.33 and 38.50 µM, 50.68–63.57%, and 17.5-23.75 mg/100 g, respectively, at the end of the fermentation. Furthermore, Probiotic and prebiotic supplementation enhanced significantly (p < 0.05) the total phenolic content, and antioxidant activity, and preserved the degradation of Vitamin C during fermentation. Moreover, there were no significant differences between the formulations regarding color, texture, and overall acceptance (p > 0.05). Consequently, the orange juice supplemented Xylooligosaccharide (prebiotic) and probiotic cultures could be applied to develop a new non-dairy synbiotic beverage product with important and high functional values and acceptance sensory properties.
