<p>Meat from pasture-raised cattle is considered to be of higher quality for human health because of its composition of fatty acids, pigments and antioxidants. Although, these animals are typically slaughtered at a later age, necessitating finishing in feedlots, this study evaluated the effect of three production systems for crossbred bulls (<sup>1/2</sup> Aberdeen Angus × ½ Nellore) on meat quality and the influence of aging. Bulls were randomly assigned to one of the following systems: Pasture (PAS) – raised and finished on unfertilized, uncorrected <i>Brachiaria</i> pasture; Feedlot (FDL) – raised and finished in feed-lot; and Improved Pasture with Feedlot Finishing (IPF) – raised on corrected and fertilized pastures, then finished in feed0lot. Meat was aged by ordinary refrigerator storage at 4<sup>o</sup> C for 1, 4, 7, and 10 days. The following parameters were analyzed: carcass weight, pH, subcutaneous fat thickness, color, texture, water loss, lipid oxidation, and antioxidant activity. Meat pH was lower (<i>P</i> &lt; 0.05) in the PAS group and higher in the IPF group, which could be due to greater glycogen depletion caused in pre-slaughter stress, resulting in a high final pH. Freezing losses were lower in the FDL group, due to higher fat content, while the PAS group had less fat. Meat from PAS animals was tougher, FDL had intermediate stiffness, while IPF had the most tender meat (<i>P</i> &lt; 0.05). Aging improved tenderness (<i>P</i> &lt; 0.05) but also increased darkening (<i>P</i> &lt; 0.05). The IPF system presents a viable alternative by producing high-quality meat and reducing the slaughter age.</p>
