摘要

Drinking alcohol is one of the important parts of the food culture. Still, long-term or excessive drinking can cause damage to the organism, and alcoholic liver injury is one of the more common types of liver injury in the clinic. Therefore, how to effectively protect against alcoholic liver injury has gradually become a research hotspot in the field of medicine and functional food. In recent years, dietary polyphenols, which have the advantages of low toxicity and side effects, multi-pathway, and multi-target effects, have attracted much attention. A variety of dietary polyphenols have been reported to protect against alcoholic liver injury. In this paper, we review the mechanism of alcohol intoxication, diseases caused by alcohol consumption, alcohol metabolism mechanism, the mechanism of action of dietary polyphenols, and the detoxification and hepatoprotective products. Finally, to provide a reference for further research on protection against alcoholic liver injury as well as the development of novel liver-protecting drugs and functional foods.
