Effect of gamma irradiation in the coffee grounds oil and kernel mango fat properties

In this study, coffee ground oil (CGO) and kernel mango fat (KMF) were exposed to gamma irradiation at 25 kGy and physicochemical properties were analyzed by 1H NMR, FT-IR, and TGA methods. A decrease in the average molecular weight and iodine index of KMF irradiated was observed. The CGO irradiated undergoes more unsaturated, and no significant changes (p < 0.05) were observed for the physicochemical properties studied. The thermal degradation behavior of KMF is different from CGO due to its higher saturation degree. The unsaturation degree plays an important role in thermal degradation behavior of studied lipids exposed to gamma irradiation.
