Review: research progress on multi-field applications of gelatin-based materials

Due to its inherent advantages as a natural polymer material, such as high biocompatibility, degradability, film-forming and gelling capabilities, and a variety of raw material sources, gelatin is widely used in many different sectors. This review attempts to thoroughly sort out pertinent research hotspots, integrate application results in order to provide reference for future research and application, as the current research on gelatin’s application is dispersed and lacks a systematic summary of its latest developments, obstacles, and future directions. In order to accomplish this, nine representative fields—food packaging materials, preservation (meat and plant preservation), hydrogel (medical and food applications), adhesives, capsules, microcapsules, soil amendment, biological stimulants, and wearable sensors—are chosen for discussion. The review also methodically elaborates on the most recent advancements in the use of gelatin products in these fields, including structural design, material preparation, challenges, and shortcomings, and development trends and application possibilities of gelatin materials are also investigated.
