<p>An ethnobotanical investigation was conducted in the Espiye district of Giresun Province, Türkiye, to identify the edible plants used for food by the local population. During the ethnobotanical field study conducted from March 2019 to March 2024, face-to-face interviews were conducted with a total of 455 participants, comprising 267 women and 188 men. A total of 168 edible plant taxa were identified, of which 76.8% (129 plant taxa) were wild. A subsequent analysis of the taxonomic distribution of the plants revealed that the Rosaceae family (20 species, 11.9%) was the most dominant group, followed by the Lamiaceae family (12 species, 7.1%) and the Asteraceae family (10 species, 6%). The use reports (URs) indicated that 67.3% (113 species) of leaves, 29.2% (49 species) of fruits, and 19.6% (33 species) of roots were consumed. The most prevalent preparation methods were boiling (39.8%), roasting (25.6%), and frying (16.1%). Regarding age demographics, individuals over the age of 60&#xa0;years demonstrated the highest level of traditional knowledge, with an average of 17.62 URs. According to ethnobotanical indices, <i>Brassica oleracea</i>, <i>Trachystemon orientalis</i>, and <i>Smilax excelsa</i> were identified as the most significant species. Additionally, this study documented ten edible plants for the first time. This study highlights the rich plant biodiversity in the Espiye region within the context of its local culinary culture. This emphasizes the importance of preserving traditional knowledge for future generations. However, statistical data also revealed gaps in passing this knowledge to the younger generation.</p>
