<p>Fruit plants have been vital to human health for centuries, offering bioactive compounds with pharmacological properties. In this context, the intake of fruits is gaining considerable importance as a protective measure to preserve human health. The present study investigates the nutritional and phytochemical compositions of four persimmon <i>Diospyros kaki</i> L. cultivars: Fuyu, Hachiya, Chocolate, and Sharon, using proximate analysis and liquid chromatography mass spectrometry. Fuyu persimmons contained the dry matter 89.4% with significant ash and protein content, making them beneficial for digestive health. Hachiya persimmons had a slightly lower dry matter content of 88% but a remarkable fibre content of 37.43%. Chocolate persimmons had a high dry matter content of 89.9%. Sharon persimmons showed a distinct composition with 87.8% dry matter, 13.5% ash, and 21.23% fiber content. Liquid chromatography-mass spectrometry analysis identified a diverse range of alcohols, aldehydes, esters, fatty acid, ketones, and terpenes across the cultivars,&#xa0;thus contributing to their flavor and aroma. Different cultivars of persimmon <i>Diospyros kaki</i> L<i>.</i> show significant biological activities, including antioxidant, anti-inflammatory, and antimicrobial properties, contributing to digestive health, cardiovascular benefits, and potential therapeutic applications in disease prevention. These results provide valuable insights into the nutritional value and potential applications of persimmons in dietary and functional food industries.</p>
