<p>Fresh ber fruits exhibit high consumer demand due to their superior taste, distinct flavour, and high nutritional contents. However, being highly perishable in nature, their limited postharvest shelf life and swiftly reduced freshness remain a&#xa0;challenge in the postharvest supply chain. Hence, in two separate studies, ber cv. ‘Umran’ fruits coated with different gum arabic (GA) treatments, <i>viz.</i>&#xa0;0, 5, 10 or 15% were investigated to extend their postharvest shelf (Experiment&#xa0;1: 25 ± 2 °C; 60 ± 5% RH;&#xa0;0, 2, 4 and 6&#xa0;days) and storage (Experiment&#xa0;2: 5 ± 1 °C; 90 ± 5% RH;&#xa0;0, 7, 14, 21 and 28&#xa0;days) life. Results showed that pre-storage 15% GA coating effectively maintained fruit firmness, titratable acidity, ascorbic acid, phenolics, antioxidants, and glutathione at higher levels, and fruit weight loss, malondialdehyde, hydrogen peroxide, soluble quinone, and activity of peroxidase enzyme at the lowest level in both experiments. Similarly, 15% GA-coated ber fruit exhibited significantly higher marketability index, the lowest disease incidence, shriveling, and chilling injury after cold storage. Application of 10% GA during ripening and cold storage resulted in maintaining the highest activities of antioxidative enzymes during ripening and storage compared to respective control fruits. Hence, the postharvest application of GA as a&#xa0;novel organic edible coating is quite effective for maintaining the freshness of ber fruit by modulating oxidative stress and augmenting the antioxidative defense system both in ambient conditions and during cold storage.</p>
