Effect of Cultivars on Physicochemical Traits and Bioactive Compounds of Quince Fruit (Cydonia oblonga) Grown in Türkiye

In the study, the quality characteristics included fruit weight, fruit size, color, firmness, soluble solids content (SSC), titratable acidity, vitamin C, total phenolics, total flavonoids, and antioxidant activity (DPPH and FRAP assays) of ‘Eşme’, ‘Ekmek’ and ‘Limon’ quince cultivars (Cydonia oblonga Mill.) over a two-year period (in 2022 and 2023 years) were assessed. The results indicated that there were significant differences (p ≤ 0.05) in the physical and biochemical properties of the fruit. Significant differences were observed among the cultivars in terms of fruit characteristics. The lowest fruit weight was identified in the ‘Ekmek’ quince cultivar in the 2022 year, whereas the highest weight was recorded in the 2023 year. In the 2023, the ‘Ekmek’ cultivar exhibited the greatest fruit size. In the same year, the highest fruit firmness was observed in the ‘Limon’ cultivar with 67.8 N, while the lowest was obtain in the ‘Ekmek’ cultivar with 60.8 N. In 2022, the ‘Ekmek’ cultivar exhibited higher SSC and acidity than the ‘Eşme’ cultivar. In 2023, while the highest SSC observed in the ‘Ekmek’ cultivar, the lowest was measured in the ‘Limon’. In 2022, the highest vitamin C was identified in the ‘Eşme’ cultivar, whereas the lowest was detected the ‘Limon’ cultivar. In both years of the trial, the bioactive compounds of the cultivars showed differences. The highest total phenolics, total flavonoids and antioxidant activity were observed in the ‘Ekmek’ cultivars, while the lowest values were obtained in the ‘Limon’ cultivar. As a result, it can be concluded that cultivars exhibit differences in fruit quality characteristics. The ‘Ekmek’ cultivar may be more appealing to consumers due to its superior quality characteristics.
