<p>The current study was carried out to determine the impact of quince rootstocks (MA and BA.29) on soluble solids content (SSC), titratable acidity (TA), sugars content and antimicrobial activity of ‘Starking Delicious’, ‘Abbé Fétel’ and ‘Beurré Bosc’ European pear cultivars in 2020 and 2021 grown under Serbian conditions. Results showed that significant differences in sucrose content (SU), total sugars content (TS), sweetness index (SI), and antimicrobial activity with the exception of <i>Proteus vulgaris</i> were found between rootstocks. However, the impact of rootstocks on SSC, TA and inverted sugars (IS) was not significant. Generally, quince BA.29 induced better values of evaluated properties than quince MA. Contrary to the rootstocks, the cultivars showed a&#xa0;stronger influence on the examined properties. The fruits of ‘Abbé Fétel’ had the best or highest values of SSC, TA, TS and antimicrobial potential. Differences between cultivars on BA.29 in IS and SU were not significant. In many cases, ‘Beurré Bosc’ also provided values as good as ‘Abbé Fétel’. ‘Starking Delicious’ only had the best sugar/acid ratio but showed the weakest antimicrobial potential. Significant positive or negative correlations were observed between more numbers of properties. Some of these had absolute values of around ± 1, which implies that a&#xa0;linear equation perfectly describes the relationship between variables. Principal component analysis (PCA) can be a&#xa0;very useful tool for segregating pear cultivars with the best sugars content and antimicrobial potential. Selecting the right and harmonious combination of the cultivar and rootstock is very important for optimizing fruit quality parameters and antimicrobial potential of pear fruits.</p>
