<p>Jujube belongs to the <i>Rhamnaceae</i> family and is known as red date or Chinese date. It has widespread uses due to its high nutritional values. In this study, jujube fruit and seeds grown in Sakarya, Turkey, were extracted and their total phenolic and total flavonoid contents were evaluated. The liquid chromatography-high resolution mass spectrometry (LC-HRMS) analyses results showed that 15&#xa0;different phenolic substances were identified in jujube fruit, while 27&#xa0;different phenolic substances were detected in jujube seeds. The total phenolic and total flavonoid contents of jujube seed were determined as 127.91 ± 3.05 mg GAE/g extract (ext) and 14.58 ± 5.22 mg catechin/mg ext., respectively. Moreover, the antioxidant and glutathione-s-transferase activity of the extracts were also investigated. The jujube seed had a&#xa0;strong antioxidant effect (IC<sub>50</sub> = 81.76 ± 3.56 μg/mL for DPPH; IC<sub>50</sub> = 58.99 ± 0.70 μg/mL for ABTS). Furthermore, jujube fruit and seeds showed inhibitory activity against the glutathione-s-transferase enzyme.</p>
