Effect of drying techniques on synbiotic encapsulation

Synbiotic-based food formulations offer a promising approach to address nutritional deficiencies and enhance public health. This review highlights synbiotic encapsulation combining probiotics and prebiotics as a key innovation to improve the stability, viability, and bioavailability of beneficial microbes in functional foods. Various drying techniques such as freeze drying (FD), spray drying (SD), spray-freeze drying (SFD), refractance window drying (RW), and fluidized bed drying (FBD) are explored for their role in preserving microbial potency and prebiotic functionality. Each method presents unique advantages in extending shelf life, maintaining quality, and ensuring effective delivery. The review also examines prebiotic compounds that synergistically enhance probiotic activity, promoting digestive health and immunity. With rising consumer demand for functional and fortified foods, synbiotic encapsulation emerges as a transformative strategy for creating resilient, nutritious, and sustainable products. By addressing current challenges and highlighting technological advancements, this review offers comprehensive insights into the future potential of synbiotic encapsulation in food product development.
